How to Make Boats of Avocado Vegetables and goat cheese ?

Ingredients :

For two boats :

  • 1 avocado

  • 60 g total peas, corn and carrots (pre-blanched)

  • 60 g grated goat cheese

  • 2 pinches of fresh dill

  • Sol

  • Pepper

Method  :

Cut the avocado in half, cut the flesh into cubes and scoop with a spoon. Be careful not to pierce the crust, as it will be needed as a base for the boats. The avocado cubes are mixed together with the carrots, corn, peas and half of the finely chopped dill.

Season with salt and pepper (add salt to taste and keep in mind that the cheese is also salty). Divide the whole mixture in two and pour in the two halves of the avocado peel. Each “boat” is sprinkled on top with goat cheese.

Bake in a preheated 200 ° C oven until the cheese is red (about 8-10 minutes). Sprinkle with the rest of the dill when serving. The recipe is easy and does not require special skills. It is a great solution for unexpected guests or for the moments when you do not feel like staying in the kitchen for a long time.

If you do not want the dish to undergo heat treatment, you can mix the diced avocado with chopped tomatoes, peppers, parsley, season with salt and olive oil and sprinkle with grated cheese. Or just improvise as you wish.
